Quick & Easy University Meals

Hey all!


As a University Graduate, I look back at my University experience as if it happened last week, and I am always thinking of ways that I could have been more organised, whether it be related to studying, meeting friends, cooking or planning for my future rather than thinking about 'the present'. Below are some quick and easy University meals or food combinations that I know helped me get through my University experience! With any meal there are obviously set rules and timings, but I'm just going to be providing the basic ingredients needed, and hopefully that will inspire future generations of students and young people to be creative with their cooking, rather than just eating a microwave meal everyday!


(1) A 'Healthy Milkshake'. This was a simple recipe recommended by BBC goodfood and I thought I would share the ingredients that you need below, for a filling but also healthy drink to get you through the day!

- One Banana

- One table spoon of porridge oats

- 80g of soft fruit (whatever you like...there is no specific fruit, especially if you're picky like me!)

- 150ml of milk (or any milk alternative)

- 1tsp of honey

- 1tsp of vanilla extract


(2) 'Shaksouka'. A simple tomato and egg dish originating from Israel.

- 4tbsp of olive oil

- 1 finely sliced onion

- 1 diced red & green pepper

- 6 crushed garlic cloves

- 2tsp of sweet paprika

- 1.2tsp of cumin seeds

-1/2tsp of cayenne pepper

- 800g of tinned tomatoes

- 2tsp of sugar

- 1tsp of lemon juice

- 4 to 8 eggs (depending on how hungry you are!)

- Small bunch of fresh, chopped coriander


(3) 'Thai Green Cury'. A traditional curry originating from Thailand.

- Coconut milk and 2 sachets of curry paste

- Palm or brown sugar (to make it sweet and spicy)

- Chicken thigh fillets

- Lemon grass, Ginger, Green chillis, Lime and Galangal

- Fish sauce or salt

- Prawns

- Sugar snap peas (3 minutes on the boil)

- Herbs, Coriander, Basil, Sliced red chilli, Shallots, Bean shoots and Lime


(4) 'Sweet Chicken Bacon Wraps'. A homemade meaty snack which can be made in less than an hour! Good as a party snack or a light lunch.

- Boneless, skinless chicken breasts

- Sliced bacon

- Cheese

- BBQ dipping sauce

- Brown sugar

- Chilli powder

- Cayenne pepper

- Salt


(5) 'Mozzarella Stick Shells'. A creative way to eat some of your favourite side dishes, altogether as one meal!

- Large onion rings (Big enough to fit a filling!)

- Small portion of macaroni cheese

- Small portion of potato slices

- Tomato sauce (not Ketchup!)

- Cheese

- Herbs and spices (Surely you can just add whatever you fancy!)


(6) 'Pasta and Couscous'. It's so good they had to name it twice!

- Small portion of pasta

- Tilda super grains (I chose the Sweet potato, chilli and coconut flavour)

- 1/2 small jacket potatoes

- Cheese (Or no cheese if you're not a fan!)
